The modern day Western diet is heavily weighted in simple grains, genetically modified foods, and processed subsistence. We do not consume enough fresh fruits and vegetables. Many of us get our whole grains from instant rice, refined wheat breads, pastas, and cereal. We eat a tremendous amount of prepackaged, pre-made meals. One-quarter of Americans eat at fast food restaurants each day. Americans are overfed and undernourished.

The consensus among scholars is that high carbohydrate diets, hinging on industrialized, processed foods, are primary contributors to the chronic illnesses currently plaguing Americans. This lack of nutrient dense food (non-processed) has increased our suffering from diabetes, heart attacks, obesity, and many other lifestyle related disorders
The good news is that, if properly fed and given the right nutrients, the human body is designed to repair itself. To do so, we often need a little guidance.
